Description

  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic, minced
  • 2 cups (480 g) chicken broth
  • 6 tablespoons honey
  • 5 tablespoons coarse Dijon mustard
  • ¼ cup (½ stick / 57 g) unsalted butter, cubed
  • 1 tablespoon chopped fresh parsley

Instructions

  • Pat the pork chops dry and season with salt and pepper; let rest for 10 minutes.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear pork chops on both sides until golden brown and internal temperature reaches 145°F.
  • Remove chops and sauté minced garlic for 30 seconds in the same skillet.
  • Add chicken broth, honey, and mustard; simmer for 3-4 minutes to thicken.
  • Whisk in cubed butter until melted and combined; season as needed.
  • Return pork chops to the skillet, spoon sauce over, and heat through; garnish with parsley.

Letting pork chops rest after cooking helps maintain juiciness.
