Instructions
- Cut the onions in half from root to tip, remove the root with a paring knife, and trim the tip off.
- Thinly slice each onion half lengthwise into half moons about ¼-inch thick and place them in a large mixing bowl.
- In a large pot over medium heat, melt the butter and add the olive oil, swirling the pot to coat.
- Add a handful of onions to the pot at a time, stirring often for about 2 minutes until they are soft and translucent.
- Reduce heat to medium-low and continue cooking the onions for 45-50 minutes, stirring occasionally until they are deeply caramelized and dark in color.
- Add brown sugar and salt to the caramelized onions, mixing well and cooking for an additional 5-7 minutes before removing from heat.
- Let the onions cool in the pot, then transfer them to an airtight container and store in the fridge for up to 1 week.
