Description

These Pumpkin Cheesecake Bars are a delightful blend of creamy pumpkin, smooth cream cheese, and a buttery Golden Oreo crust, making them a must-have for any fall gathering. Perfectly sweet with a hint of spice, these bars are easy to prepare and sure to impress!

  • 32 Golden Oreo cookies
  • 6 tablespoons unsalted butter (melted)
  • 12 oz cream cheese (softened)
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 1/2 cup cinnamon baking chips
  • 16.5 oz package refrigerated sugar cookie dough

Instructions

  • Preheat the oven to 350°F and line a 13×9 inch baking pan with parchment paper.
  • Crush the Golden Oreos and mix with melted butter; firmly press into the bottom of the prepared pan.
  • In a bowl, beat cream cheese and sugar until smooth. Add egg, vanilla, pumpkin pie spice, and pumpkin puree; mix until smooth.
  • Pour the cream cheese mixture over the crust. Slice the sugar cookie dough and layer it over the top. Sprinkle cinnamon chips on top.
  • Bake for 30-40 minutes until edges are golden and center is slightly wobbly. Cool completely, then refrigerate for at least 2 hours before serving.

Notes
