- 7 tablespoons (125 grams) raspberry jam
- 1/2 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat the oven to 350 F (175 C) and line an 8″x8″ pan with parchment paper.
- In a bowl, combine flour, oats, granulated sugar, brown sugar, cinnamon, baking soda, and salt.
- Cut the butter into small cubes, add to the dry mixture, and mix until incorporated and forms a dough.
- Drizzle vanilla extract over the mixture and combine until it becomes dough-like.
- Press 2/3 of the dough into the bottom of the prepared pan to form the crust.
- In a small bowl, mix the filling ingredients to prevent the raspberries from thawing.
- Spread the raspberry filling over the crust, leaving a border around the edges.
- Sprinkle the remaining crumble mixture on top of the jam and lightly press down.
- Bake for 30-40 minutes until golden brown and bubbly. Let cool for 2 hours before chilling.
- Slice and store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
Notes
For gluten-free options, use gluten-free oats.
Seedless jam is recommended for the filling to ensure smooth texture.
