- 3 eggs (~55g/2 oz each)
- 125g / 4.5 oz dark cooking chocolate , bittersweet / 70% cocoa
- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Work steadily to maintain the temperature of your whipped egg whites and cream.
- Separate the eggs while they are cold. Place the whites in a large bowl and the yolks in a small bowl. Set the whites aside while preparing other ingredients.
- Whisk the yolks until uniform in consistency.
- In a microwave-proof bowl, combine broken chocolate and butter. Melt in the microwave in 30-second intervals, stirring between bursts until smooth. Allow to cool slightly.
- Beat the cream until stiff peaks form, taking care not to over-whip.
- Add sugar to the egg whites and beat them until firm peaks form.
Notes
Ensure that your bowl and utensils are completely clean when whipping the egg whites.
For a richer flavor, consider folding in a splash of vanilla extract with the melted chocolate and butter.
Garnish with additional whipped cream and chocolate shavings for an elegant presentation.
