Description

These Shamrock Sugar Cookies are light, flavorful, and perfect for sharing on St. Patrick’s Day. Made with buttery goodness and vanilla bean seeds, each cookie is adorned with sweet frosting and decorated with fun colors, making them an irresistible addition to any festive gathering.


Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • seeds from 1 whole vanilla bean

  • 2 teaspoons pure vanilla extract
  • 3 cups confectioners’ sugar, sifted
  • 3 tablespoons heavy cream, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • salt, to taste
  • gel food coloring (optional)
  • sprinkles (optional)

Instructions

  • Whisk together flour, baking powder, and salt in a medium bowl; set aside.
  • In a large bowl, beat the softened butter and granulated sugar together on high speed until creamy and combined (about 3 minutes). Add vanilla bean seeds, egg, and pure vanilla extract; beat until well combined.
  • Gradually mix in the dry ingredients until a soft dough forms. If dough is too sticky, add more flour as needed.
  • Divide the dough into two equal parts; roll each on lightly floured parchment paper to 1/4-inch thickness. Stack and refrigerate for 1-2 hours or up to 2 days.
  • Preheat oven to 350°F (177°C). Cut the chilled dough into desired shapes using cookie cutters, placing them on lined baking sheets.
  • Bake cookies for 11-12 minutes until lightly browned. Allow cooling on the sheet for 5 minutes, then transfer to a wire rack.
  • For the frosting, beat softened butter and vanilla bean seeds until creamy, then mix in confectioners' sugar, heavy cream, and vanilla extract. Adjust with salt if too sweet.
  • Decorate cookies with frosting using a piping bag. Add gel food coloring and sprinkles as desired.
  • Store frosted cookies at room temperature for 1 day, or in the refrigerator for up to a week.
