Description

This Sheet Pan Gnocchi with Sausage and Veggies is an easy, flavorful dish blending roasted veggies, crispy gnocchi, and smoked sausage for a perfect weeknight dinner.


Ingredients

  • 1 bag shelf-stable gnocchi
  • 1/2 yellow onion, thinly sliced
  • 2 cups bell peppers, thin strips
  • 2 zucchini, chopped
  • 4 smoked sausage, sliced
  • 3 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • grated parmesan (optional)

Instructions

  • Preheat oven to 425°F and line a baking sheet with parchment paper.
  • Spread uncooked gnocchi, sliced onion, bell peppers, and zucchini on the baking sheet.
  • Layer sliced smoked sausage over the vegetables and gnocchi.
  • Drizzle olive oil and sprinkle with Italian seasoning, salt, and black pepper; toss gently.
  • Roast in the oven for 25 minutes, stirring halfway through for even browning.
  • Optional: Sprinkle with grated parmesan before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for 3 months.
To refresh texture during reheating, briefly broil after reheating in oven.
Feel free to use seasonal vegetables or swap sausage for plant-based alternatives.
