This Sheet Pan Gnocchi with Sausage and Veggies is an easy, flavorful dish blending roasted veggies, crispy gnocchi, and smoked sausage for a perfect weeknight dinner.

- 1 bag shelf-stable gnocchi
- 1/2 yellow onion, thinly sliced
- 2 cups bell peppers, thin strips
- 2 zucchini, chopped
- 4 smoked sausage, sliced
- 3 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper
- grated parmesan (optional)
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Spread uncooked gnocchi, sliced onion, bell peppers, and zucchini on the baking sheet.
- Layer sliced smoked sausage over the vegetables and gnocchi.
- Drizzle olive oil and sprinkle with Italian seasoning, salt, and black pepper; toss gently.
- Roast in the oven for 25 minutes, stirring halfway through for even browning.
- Optional: Sprinkle with grated parmesan before serving.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge or freeze for 3 months.
To refresh texture during reheating, briefly broil after reheating in oven.
