- 1 lb Brussels Sprouts, halved
- 1 lb Sweet Potatoes, peeled and cubed
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Smoked Paprika
- 1/2 tsp Salt
- 1 tbsp Maple Syrup
Instructions
- Preheat oven to 400°F (200°C).
- Halve Brussels sprouts, and cube sweet potatoes.
- Mix olive oil, garlic powder, smoked paprika, and salt in a bowl.
- Add Brussels sprouts and sweet potatoes, tossing to coat.
- Heat a baking dish with remaining olive oil in the oven for 5 minutes.
- Spread the seasoned veggies in the hot dish and roast for 15 minutes.
- Drizzle maple syrup over the veggies, toss to coat, and roast for an additional 10-15 minutes until caramelized.
Notes
Don’t overcrowd the pan for even roasting.
Adjust seasoning to taste.
